Ingredients
- 2 eggs, lightly beaten
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1 cup leftover oatmeal
- 1 cup raisins
- 1/2 cup vegetable oil
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- Place flour, brown sugar, baking powder and baking soda in a large bowl.
- Mix well.
- In another bowl, whisk eggs and oil.
- Stir in oatmeal, raisins and vanilla.
- Fold into dry ingredients and stir just until moistened.
- Spoon into 12 paper-lined muffin cups.
- Bake at 350 degree F, for 18-20 minutes or until the muffins test done.
