Coconut Icecream with Mixed Berries |
- 800ml coconut milk
- 4 medium-sized eggs
- 85g caster sugar
- Cherries, (optional)
- Flaked coconut, (to serve)
- Assorted berries, (to serve)
- Hot fudge, (to serve)
Method
- To prepare the ice cream, place coconut milk in a large saucepan and heat gently until it begins to bubble.
- Remove from the heat. Whisk together eggs and sugar in a mixing bowl until pale. Continue to whisk while adding the heated coconut milk in a steady stream.
- Leave the mixture to cool, stirring occasionally. Pour into a freezer-proof container and freeze for 3 hours.
- Remove from the freezer and scoop the ice cream into a food processor. Process until smooth. Pour back into the freezer-proof container and return to the freezer for 4-5 hours until solid.
- Serve the ice cream with berries on the side. Sprinkle some flaked coconut and hot fudge on top.
