Sweet Potato Chips

Sweet Potato Chips 
Sweet potato chips
Ingredients

  • 2 large sweet potatoes, (scrubbed clean)
  • Sunflower oil, (for deep frying)
  • Salt and freshly ground black pepper
  • 250ml double cream
  • Handful spring onions, (finely chopped)
  • 1 garlic clove, (finely chopped)

Method

  1. Using a mandolin or sharp knife, slice potatoes into pieces no thicker than 2cm.
  2. Place in water while cutting the remaining slices.
  3. Heat oil over medium heat.
  4. Dry potato slices with kitchen paper and fry a handful at a time until golden brown and crispy. Lift out of oil with a slotted spoon, drain excess oil on kitchen paper and season.
  5. To make dip, mix together cream, spring onions and garlic.
