Sweet Potato Chips
Sweet potato chips |
- 2 large sweet potatoes, (scrubbed clean)
- Sunflower oil, (for deep frying)
- Salt and freshly ground black pepper
- 250ml double cream
- Handful spring onions, (finely chopped)
- 1 garlic clove, (finely chopped)
Method
- Using a mandolin or sharp knife, slice potatoes into pieces no thicker than 2cm.
- Place in water while cutting the remaining slices.
- Heat oil over medium heat.
- Dry potato slices with kitchen paper and fry a handful at a time until golden brown and crispy. Lift out of oil with a slotted spoon, drain excess oil on kitchen paper and season.
- To make dip, mix together cream, spring onions and garlic.
